The one you usually want is maxresdefault at 1280×720 — the HD yt thumbnail. The catch: it is not generated for every video. Older uploads, auto-generated channels, and some Shorts lack it entirely, and YouTube silently falls back to hqdefault (480×360), which is the one file guaranteed to exist for every single yt video.
